This is a recipe by Mary Berry, the optional extras are things I like to add.


225g butter

225g demerara sugar

75g golden syrup

275g rolled porridge oats

Optional ingredients – mixed fruit, freshly squeezed lemon or orange juice, cocoa powder, chocolate drops.


1. Heat oven up to 160 Celsius (140C fan)

2.Melt the butter, sugar and golden syrup in a pan over a low heat until the sugar is dissolved.

3.  Add the porridge oats and any additional ingredients.

4. Mix together well and press into a 30cm by 22cm baking tray.

5. Bake for 35 minutes then leave to cool to about room temperature before turning out.

Prep time – 10 minutes, Bake time – 35 minutes

Calories – 314 per portion
